PREPARACIÓN/
1. Asa el tuétano en un sartén a fuego alto, cuando comience a sacar su grasa agrega los granos de elote y cebolla, cuece durante 10 minutos o hasta que esté dorado, agrega el epazote y salpimienta.
2. En una plancha a fuego alto sella la carne con el aceite al término deseado.
3. Sirve en tacos y termina con el esquite de tuétano.
