• 1/2 cucharada de achiote molido.
• 3 tazas de queso Oaxaca rallado.
• 1 taza de queso fresco desmenuzado.
• Rodajas de jalapeño.
*Para usar como barniz y pintar las empanadas antes de colocarlas en el horno:
1 yema y 1 cucharada de agua.
PREPARACIÓN/
1. Calienta la mantequilla en una sartén a fuego medio bajo, añada la cebolla
picada y cocine.
2. Corta el chorizo en trozos y agrégalo a la sartén con la cebolla. Cocina el chorizo a fuego medio hasta que esté completamente
cocido, revuélvelo y aplasta con frecuencia para ayudar a desmenuzarlo. Agrega el achiote. Retira del fuego y deja que la mezcla se enfríe completamente antes de usarla.
3. Mezcla el queso Oaxaca rallado con el queso fresco desmenuzado.
4. Para armar las empanadas, ponga una cucharada de mezcla y una cucharada
de chorizo en el centro de cada disco de empanada, y agrega las rodajas de
chile jalapeño.
5. Dobla los discos de las empanadas y sella los bordes suavemente con los dedos. Para formar el churrito, gira y dobla los bordes de las empanadas con los dedos,
6. Deja que las empanadas reposen en el refrigerador durante una hora o hasta
que estén listas para hornear.
7. Precalienta el horno a 200°C.
8. Con una brocha pastelera, pinta ligeramente la parte superior de las empanadas con la mezcla de yema de huevo, lo que les dará ese bonito color dorado.
9. Hornea las empanadas durante 20 – 25 minutos hasta que estén doradas.
